Acai-berry and coconut-chia parfait

Chia seeds are one of my absolute favorite ingredient! They are kind of magical as they can turn any liquid into a pudding consistency. They expand about 12-times their size and since they have no significant taste they can be used with all different kind of flavors which makes them extremely versatile.

This parfait is the perfectly creamy due to the coconut milk and the avocado (trust me, it sounds weirs, but again avocado has a very neutral taste and makes the perfekt secret ingredient for the creamiest mousse). It's naturally sweetened from the dates and the maple syrup which matches the acidity of the berries perfectly well.

Serves 2-4 


For the acai-berry mousse:

  • 1 cup frozen raspberries
  • 1 avocado
  • 4-5 pitted dates

For the coconut-chia pudding:

  • 3 tbsp chia seeds
  • 1 cup of water
  • 3 tbsp full fat coconut milk
  • 1 tbsp maple syrup
  • a pinch of vanilla

Toppings (optional):

  • fresh raspberries
  • fresh mint leaves 




In an airtight jar combine chia seeds, water, coconut milk, maple syrup and vanilla bean powder and stir well until everything has combined. Leave it in the fridge for at leas 30 minutes but preferably over night (around 8 hours) to allow the chia seeds to thicken. 


When you're ready to serve, place the frozen raspberries, the avocado and the dates into your blender and blend until there are no chunks of avocado or dates left. 


Layer the mousse and the pudding into a jar and enjoy with some fresh mint and more raspberries on top.
