sweet n' sour Lemon & coconut bliss balls

When I was a little girl my mom used to make these turkish yogurt cakes with desiccated coconut on top. I used to love them due to their sweet and sour taste. Somehow it seems like this combo has left an impression in my mind or on my tastebuds.. Since it inspired me to create these Sweet N' Sour Bliss Balls. Taste wise they're really close to how I remember the taste of my moms cake. But even if you have never had the chance to have that cake I'm sure you will love them!

Ingredients: 

 

100g cashews

100g dates

25g desiccated coconut + more for rolling

50g oats

zest of one lemon 

juice of one half a lemon 

 

Instructions:

 

Place everything except for the lemon juice into a blender and blend until combined. Add in the Lemon juice and blend again until the mixture is smooth and evenly blended. 

 

Remove the mixture from the blender and form about each  a teaspoon amount of the dough into little bliss balls. Roll them in some desiccated coconut and chill them in the fridge for a couple of hours to allow them to harden a bit.
