These Truffles are super easy to make and require only three ingredients. And even though they might not look super amazing, colorful and they don't attract everyones attention they are something I make every week (at least once). They are the perfect snack and taste like a chocolatey treat that doesn't make you feel like you're eating something super healthy, even though they actually are good for you. They're super gooey and definitely sticks your teeth together, I promise ;)
100g Cashews (almonds, walnuts, pecans or even sunflower seeds would work as well, just replace the cashews with the same amount)
10-15g of cacao powder, depending on how chocolaty you like it.
pistachios, crushed almonds or cacao for coating the truffles (optional, if you don't have it, just leave it out!)
Place all the ingredients into a blender or a food processor and blend until the nuts are broken down into a flour like consistency and the mixture sticks together when you form it with your hands. Do not use a tamper to push the ingredients into the knifes of the blender while blending. Otherwise the truffles will get too dense instead of a more light and fluffy consistency. It might help to vary the blending speed during the process to make sure that the everything gets blended evenly.
Once the desired consistency is reached, take the truffle mixture out if the blender and roll it into balls. Stored in the fridge they could last for up to a week, if you can conquer yourself and do not eat them all at once...
